Recipe: Breaded Haddock with Mango Salsa

Just made this Mango Salsa recipe from and we loved it (and I have picky eaters)

I purchased pre-breaded fresh haddock fillets from our local market and made this mango salsa and some white rice--delicious!


1 ripe mango, diced (about 1 1/2 cups)  although I used two mangos and enjoyed the mango-y-ness
1/2 medium red onion, finely chopped
1 half a cucumber, peeled and diced
fresh cilantro leaves, chopped (I actually used parsley because I had it on hand and I thought it worked well even though I love cilantro)
 1 lime squeezed over the whole thing (or about 3 tablespoons of lime juice)
salt and pepper to taste

This was easy, fresh, and really colorful! Try it :)
